Want A Healthy Dish That Tastes Great?

OK, perhaps a pointless question because who DOESN’T want to eat well without worry?

My wife Alex came up with a terrific recipe that is not only easy to make but tastes great as well…time for some salmon and cauliflower rice!

Here are your ingredients:

Beautiful salmon filets! Salt and pepper them, and you can leave the skin on if you like. I also add Tom’s salmon seasoning but you can add dill or anything else you love to bring out the flavor!

Listen, this is not a recipe for precise amounts of anything. For example, I say use as much minced garlic and diced onion as you like, sautéed in olive oil. Add a bit of salt and pepper as well…I usually cook these for about five minutes.

Add your peas and diced carrots and saute for another five minutes or so….

Next, sear your salmon in a bit of olive oil in a hot pan. I add a nice salmon seasoning from Tom’s, but you can add salt, pepper and dill..whatever flavors you like on your salmon – or let is shine with nothing but great salmon flavor!

Cook the salmon for 3-4 minutes to get the nice sear, then flip it over onto the skin side, add a bit of chicken or vegetable stock, cover and cook for 15-20 minutes on low heat.

Here’s how easy it is:

Plate the cauliflower rice and top with salmon – fast, easy and delicious!

And of course, since I don’t like cauliflower rice I use white rice instead! Here’s a look at the entire process – this is a twenty minute dish that gives you flavor and healthy eating as well:

This is another great salmon dish, but the new ingredient for me in this recipe is feta cheese – which I don’t use nearly as much as I should!

  4. I like cauliflower, and first tried cauliflower rice in 2018. Sad to say I didn’t care for it at all. I love Salmon though, so would eat that dish with a small portion of actual rice. 😉
