
Carol Heads To Paradise!
I love Carol’s website “Carolcooks2.com” for many reasons, and one of them is her terrific “A – Z” of world cuisines…this week she shared one of the more gorgeous places to eat in the world!
Mauritius is an island paradise in the Indian Ocean, located off the east coast of Africa. You’ll find a stunning landscape of soft sand beaches, mountains, tea plantations, waterfalls, forests and sparkling clear lagoons encircled by coral reefs.

Carol was inspired to cook the food of this gorgeous island. As she writes:
“Mauritian cuisine is a flavourful fusion of Indian, African, and French culinary traditions using the freshest local ingredients like rice, seafood, tropical fruits, and spices. It is my kind of food, known for using fresh, local ingredients and a blend of sweet, savoury, and spicy flavours. Popular dishes include Dholl Puri, a popular street food, and various curries, stir-fries, and seafood preparations like Vindaye poisson (pickled fish) and Rougaille (a spicy tomato-based stew).”

Magic Bowl…Bol Renverse!
Carol shares the recipe for this uniquely named dish from Mauritius. She writes:
“Bol Renversé is called “magic bowl” in Mauritius because of the theatrical way it is assembled and served. The ingredients are layered in a bowl, starting with a fried egg, and then flipped onto a plate, creating a surprising and fun presentation where the sauce and stir-fry elegantly cover the dome of rice. This inversion is what makes the dish seem “magical”. “
