I love reading food blogs, where I discover so many incredible new recipes to try, especially when it involves unique products from around the world!
The Chefs Michiel and Jeen from the “Cook And Drink” site shared this recipe for a chorizo and octopus dish with their local mushrooms!
As they wrote on their blog:
Saffron Milk Caps (Rovelló de Botó) are very popular in Spain. The picture below shows fresh Saffron Milk Caps on the Mercado Central in Valencia.

This is what I love: local mushrooms that I probably can’t find, but why not look? They also offer this:
Alternatives to milk cap mushrooms include other edible mushrooms like saffron milk caps, false saffron milk caps, and king boletes, which have a similar flavor profile and are often found in similar habitats.

For a more readily available option, consider common varieties such as button, cremini, and portobello mushrooms(Agaricus bisporus), which are versatile and can be used in a wide range of dishes.
Chefs Michiel and Jeen also offer a delicious drink to go along!

We opened a bottle of Domaine Font-Mars Picpoul de Pinet. Picpoul de Pinet (Son terroir c’est la mer) is a white wine from the South of France between Narbonne and Montpellier. The terroir (think calcareous soil) is influenced by the sea, which is reflected in the mineral taste of the wine.

I have a recipe coming up with octopus and chorizo. It’s such a wonderful combination! Those two can really cook. Wish I could find those shrooms…..
Im going to look for the most exotic I can find at New York’s farmers market in Union Square and do the best I can!
We don’t have those mushrooms here, but more than likely one of the local mushroom growers will find the little spores somewhere and give it a try!
