Who Wants Some “Flaming Sushi?”

Probably not a question you get asked much, but I’ve noticed lately that most of the sushi bars I go to in New York offer up a few dishes that have been “scorched” a bit…and this “fiery” trend is growing: last night I shot this video in a New York restaurant:

Here’s how it looked:

Now, the funny prt was my wife then asked me to stop filming – so the people who ordered it could eat it! Yes, this was happening at the table next to me and I had to capture it – a flaming hot pot dish!

“Flaming food” seems to be everywhere right now…especially in sushi bars!

I shot this yellowtail getting a quick scorch and then some fatty salmon being caramelized for us:

Another sushi restaurant really gave this yellowtail and nice sear for us:

And one of my favorite preparations of Peking Duck takes place at Hutong restaurant in New York’s midtown district – they bring you your Duck, but before they slice it for the table they give you one last fiery spectacle:

Finally, I will never forget the time Chef Michael Chiarello took to a blowtorch to finish a stuff pork loin dish:

  1. Interesting! Is it still sushi if it’s flaming?! Sounds fun.

    • Well, it’s a touch that all of them seem to add now to at least one of the dishes…I had a salmon sushi with a warm tomato on top…that’s stretching it a bit as well, right? It’s good but strange to be sure!

  5. I have avoided Sushi because I rarely enjoy raw food. But if it is flamed, that might be different!
