Celebrating “Comfort” Food! Pasta Salad, Caramelized Cookies And More Recipes!

Celebrating “Comfort” Food…

It means something different to each of us, and so, when Jo Tracy made it the topic for her latest cookbook event, Darlene Fost jumped onboard! Here’s what she wrote:

“When I was growing up on the ranch in Alberta, Canada, we held many huge family and friends potluck barbecues and picnics. Everyone brought something, and there was always a yummy pasta salad or two. It is heating up here on the coast of Spain, and we are eating lots of salads. So I made The Best Pasta Salad from his book. It was simple, easy and comforting!”

She took her recipe from Chef Jamie Oliver’s cookbook. Here is what Jamie says about comfort food:

“Comfort food can come from many countries, with things like the ultimate chilli con carne, or the fluffiest American pancakes. The one thing all these recipes have in common is memories of childhood, like enjoying company around the table. Remember: Don’t eat to live, but live to eat. That’s what it’s all about!”

Beautifully said! Click here to see two recipes that Darlene shared!

Darlene shared this recipe at the cookbook club hosted by Jo of Brookford Kitchen Diaries. Check out the other recipes!

I shared mine yesterday:

I made my ultimate comfort food: pomme puree! This recipe from the late Chef Joel Robuchon is indulgent in the best way! See the recipe here!

As I said, this dish was part of Jo’s “Comfort food” cooking exercise, and here’s how she started it off:

The “comfort” recipe that Jo sharied was for Caramelised White Chocolate and Macadamia Cookies, and they look delicious!

Speaking of comfort food:

Eggs!

I love eggs. I love them scrambled, poached, over easy and in this case, made with potato chips!

  1. Thanks so much for sharing my entry into the Comfort Food Cook Book challenge. This was a fun one! I made your Potato Chip Scrambled egg recipe and loved it. Eggs are definitely comfort food!

  2. Reading this has been huge weekend fun and, as often, am commenting with a big smile on my face, so 🙂 ! Methinks my ‘comfort food’ is making Asian stirfries so dependent on my mood at the moment plus what is staring me in the face from the fridge! Go thru’ my shelf of different sauces and begin . . . oh, risottos bring forth the same emotional response, I SO love just standing there daydreaming and stirring and sipping from that mysterious glass on the table next to the stove 🙂 !

  3. I love pasta with a tomato sauce – real comfort food!

  4. Pasta is one of my go-to comfort foods, along with Indian curry, and traditional British meat pies! 🥧

    Best wishes, Pete.

  5. I think I need to make a pasta salad today! Celebrate summer!
