
Who’s Up For Some “Girolle“ Food?
Well, I am – and this is a dish worth waking up for!
Chefs Michiel and Jeen from “Cook And Drink” shared this recipe – which started like this:
“Friday morning, beginning of September, we go shopping at the organic street market in the beautiful city of Haarlem. We want to buy fruit and vegetables, cheese and obviously mushrooms. The season just started but already the stall offers lobster mushrooms, truffle, chicken of the wood, mai take, trompette de la mort, cèpes and girolles, also the grey (grise) and the yellow ones (jaune). They look perfect and we decide to buy 150 grams. Greyish cap, bright yellow stem, perfect with an omelette. “

Oh and just so you know:
“With mushrooms, common names can be confusing, particularly when it comes to Chanterelle and Girolle. Chanterelle refers to a whole family of wild mushrooms (Cantharellus) which includes the Girolle (C. cibareus), but the Girolle is often sold under its own species name.”

This is a great breakfast: baked eggs and a chocolate taco with fresh strawberries. It’s all because my great friend and Chef / Author Barbara included it in her cookbook titled “Chocolate For Breakfast” and cheers to that!

I love any and all mushrooms, other than those that will kill me, and these do not disappoint. this type of mushroom is new to me –
They all look delicious, John. I am 2 hours away from dinner and they are making me hungry.
(Spanish Chicken tonight, with chorizo, onions, peppers, chestnut mushrooms, and vegetable rice.)

Pete, you menu sounds delicious! Alex has three big days of shows starting tomorrow so an early dinner at a new italian restaurant a nice 12 block walk away and then to bed – OK, some red wine of course but you have to have that right? Cheers!
