I will be honest: I know a fair number of people don’t really like it: whether it’s the texture – a “meat custard” vibe – or simply the concept of eating what’s inside a hard bone, it’s a polarizing ingredient – but it shouldn’t be, because it’s deliciously healthy!

I try to eat healthy, and that’s why bone marrow is on my list!

Why am I telling you this? Because Chef Mimi shared an incredible recipe I have to try!

I love reading Chef’s blog because she has so many unique recipes, always with insightful stories as well….and in fact, the timing of her post was perfect because just last night I had a unique bone marrow dish!

I shot this video as my wife Alex attempted to remove roasted bone marrow and top our bowl of pasta with it – it was proving a funny challenge so our friend Lena took over!

This dish was incredibly flavorful as the bone marrow really adds a creamy and savory flavor to the buttered noodles…and remember I cooked once with bone marrow in a very different way – my wife Alex filmed me trying to extract it from the bone:

  1. Thanks, John! I wish bone marrow out of the bone was more photogenic! But once you know it and love it, it’s a beautiful sight! I really want to try pasta with marrow!
