A Hot Summer Needs A Cool Gazpacho Recipe! Here’s What I Made And You Can Too!

Cheers To A Healthy Summer!

Yes, I toasted this healthy Gazpacho recipe by serving it in a wine glass!

After a month of traveling, my wife and I decided it was time to focus on some healthy summer foods, like chilled Gazpacho – so I made a batch!

Here are the ingredients – all fresh:

About 2 pounds ripe tomatoes of all kinds! Use Heirloom, Orange, baby, with the large ones cored and roughly cut into chunks

1 cucumber, about 8 inches long, peeled and roughly cut into chunks

3 small mild sweet onion peeled and roughly cut into chunks

5 cloves garlic

2 teaspoons sherry vinegar, more to taste

Salt

½ cup extra-virgin olive oil

Got it all set aside? Great – let’s cook!

Chop all of the ingredients roughly and then combine the tomatoes, cucumber, onion and garlic in a bowl – so easy, here’s a look:

Put it all in a blender or like me, use a hand blender until they all combine in a very smooth liquid – blend for at least 2 minutes, pausing occasionally to scrape down the sides with a rubber spatula. With the motor running, add the vinegar and 2 teaspoons salt. Slowly drizzle in the olive oil. The mixture will turn bright orange or dark pink and become smooth and emulsified, like a salad dressing. Here is the entire process:

At this point, you can strain all of the small pieces of tomato and cucumber out, but I leave my with a hint of chunkiness!

Refrigerate for a few hours to get it nice and cold, and to let the flavors get to know each other!

Before serving, adjust the seasonings with salt and vinegar.

I served mine in a wine glass with a few drops of fresh lemon juice, plus a drizzle of olive oil and some finely diced cucumber and tomato!

There you go! As the recipe pointed out, the use of olive oil really helps the gazpacho have a creamy, almost carrot soup quality, but the flavor is much much more than that!

You can see that olive oil glistening in the gazpacho, and when you add the diced cucumber and tomato, it really pops! Oh and a drizzle of lemon really brings it to life as well…

I really loved. this: so much that I made it again – with a few changes and I will be sharing that soon!

    • Here in New York, it’s the height of the tomato season so we are taking advantage of it! I have only made it once before but a friend gave me some different ways to try it and the orange tomatoes and olive oil really brought out a sunny hue…doing another version tonight which I will share – as part of an end of summer blowout!
