Who Wants Some “Herby Feta?”

Well, I never knew I did, but that’s all changed with this incredible recipe my wife sent me – she found it on Instagram, shared by Chef Georgia May:

Thank you Georgia for posting this – a terrific recipe I couldn’t wait to make! It uses a bunch of green vegetables and green herbs with Feta to really help this Salmon pop!

Here are the ingredients:
– 2 salmon fillets
– 1/2 lemon
– Salt and pepper

– 150g tender stem broccoli
– 150g asparagus
– 100g peas
– 1 garlic clove, finely diced
– 1/2 lemon juice and zest

Making An “Herby Feta!”

This is the key to this dish and it’s so easy and delicious! Only 4 ingredients!

– 100g feta
– Small bunch mint
– Small bunch dill
– 1/2 lemon, juice and zest


Dice the mint and dill and stir into the crumbled feta with a squeeze of lemon juice and the zest. Then set aside.

I took the salmon off the skin and cut it into chunks – but you can do it whole as well. Add the salmon fillets to a lined baking tray, drizzle with a little oil, salt, pepper and a squeeze of lemon, bake at 200 degrees for 8-10 minutes.

As the video showed, while the salmon is cooking, you cook the greens. Cut the woody part off the asparagus and Broccoli, then cut both into small pieces.

Take a pan on a medium high heat with a little oil. Add the garlic and cook for a couple minutes. Add the broccoli and asparagus and cook for around 3-5 minutes until just tender and starting to charr, then add the peas, squeeze of lemon, lemon zest, salt and pepper and toss through.

Serve up. Divide the greens onto two plates, top with salmon, the herby feta and finish with a drizzle of extra virgin olive oil and some cracked black pepper.
