A Healthy Seared Salmon + Asparagus Pea Feta Salad Meal! Recipes Here!

As happens, frequently, this dish began as an Instagram link from my wife Alex…she wanted a healthy salad that was different, and this one did the trick!

I decided to make this the + one to my normal seared salmon dish that she loves…so let’s get cooking healthy!

Here are the ingredients I used for the salad: note that I didn’t have Fava Beans and chose not to replace them with a bean – I added Avocado!

1 cup fresh peas

6 stalks of asparagus – diced and tough end of stalk tossed out

1 can artichoke hearts – diced

2 avocado – diced

1 container butter lettuce or you choice of green

6 oz. crumbled feta cheese

1 lemon

pickled red onion to taste

Note: I you want to add the pickled red onion, just follow an easy pickling recipe and have it in the refrigerator for times like this!

As for this easy dish, first, dice and blanch the asparagus in boiling water for 3 minutes, then plunge in icy water…do the same with the peas and they are both ready to go.

I placed my butter lettuce in a salad bowl, and the next part was easy…just start adding all of the ingredients like this:

I squeezed a bit of lemon, and the salad is ready to go, so let’s sear some salmon!

I used 1 lb King Salmon but anything works great

2 tbl. Tom Douglas Salmon Rub or any seasoning you like

We love pan-seared salmon: after sprinkling your spices on the flesh side, just cook it in a bit of olive oil on medium-high for about 5 minutes, I flip it so the skin is down, then lower the temperature and add a bit of chicken stock, cover it and let it finish cooking..here’s how easy it is!

Now, its just a matter of adding the salmon to the plate and enjoying a great healthy meal!

I served Alex’s salmon over some cauliflower rice, and for mine, I went with rice cooked with garlic and onion…

This is quick, easy and delicious…as for that rice underneath, I have also made a variation of this dish using a “made up” succotash recipe:

    • We are avocado lovers Pete, partly because they are pretty cheap and plentiful in LA…in New York they are all rock hard and you have to buy them a week in advance so they can ripen!
