
A Healthy 2025 Thanks To These Healthy Mushrooms!
Chefs Michel and Jeen, who have the terrific blog “Cook And Drink”, have shared this delicious and healthy dish for the new year!
It combines two uniquely delicious mushrooms:

Oyster Mushrooms Are So Good For You!
As I found online, Oyster Mushrooms have so many great health benefits. In addition to being highly nutritious, they may promote heart and immune system health, encourage healthy blood sugar control, and provide antioxidant and anti-inflammatory effects.
So let’s add another Mushroom to the mix – first, find a tree!

Shiitake Mushrooms Are Grown On Wood!
I will let Jeen and Michel tells us the next part:
“Shiitake is becoming more and more available. It has a unique flavour, savoury, meaty, earthy and it is rich in umami. The name is a combination of shii (a tree native to Japan and Korea, also known as the Japanese Chinquapin) and take (meaning mushroom, as in matsutake and maitake). The mushroom grows on decaying wood, not only on shii but also on other trees such as oaks and chestnuts. It’s fun to buy a shiitake log and grow your own mushrooms.”

As I’ve noted, Mushrooms are very healthy! As I found:
Rich in potassium, low in sodium and loaded with heart-healthy compounds, mushrooms help prevent plaque buildup on arterial walls. Varieties such as shitake, maitake and reishi also contain beta-glucans, a type of prebiotic fiber associated with lower cholesterol and blood pressure levels and reduced inflammation.
I plan to make this dish next week…I cook with Mushrooms often and am always looking for a new way to prepare them:

Speaking of Mushrooms, I have to share a funny line I’ve always remembered about Shiitake Mushrooms:

I remember a scene from the classic TV comedy “The Golden Girls”, when Bea Arthur shows off her cast after breaking a leg. She says her students all signed it, then reads one that says:
“Mrs. Zbornak Eats Shit-take Mushrooms!”

I like mushrooms of all kinds, and use them regularly in cooking. But I have yet to try a dish where they are the only ingredient. I will though.
