My Fried Zucchini Pasta Recipe! It Has Avocado, Lemon, Sausage and More!

Who Has Leftovers?

Well, the answer is simple: we all do! So when I found myself with an eclectic collection of leftover ingredients – including zucchini, sausage, avocado and mozzarella cheese, I decided to make one of my favorite dishes – using fried zucchini!

It all started when I took some frozen sausage and cooked it up with lots of sliced garlic in olive oil…then, I heated up more olive oil and did this:

Cue The Flying Zucchini!

I sliced an entire zucchini very thinly and cooked them in batches – stirring so they wouldn’t stick and get some uniform crispness on them…

I put the hot slices on a paper towel and sprinkled lots of basil on top as well as a nice amount of salt.

Next, I cooked some Bucatini pasta, plated it, then added the sausage garlic mixture with the olive oil it was cooked in, added a big topping of zucchini, then threw on some diced avocado, mozzarella cheese and a big squeeze of lemon!

For me, the final dish was a fun, fresh and delicious use of ingredients…I loved the tartness of the lemon along with the olive oil and avocado – and I can put mozzarella cheese on anything!

I love cooking fried zucchini – the basil adds a very sweet herbal pop – and finish this off with a glass of red wine and the night is complete!

  1. This looks wonderful. I like everything about it. I may not have fried the zucchini just because, well, frying, but I bet the slices stay together better that way! Love the sausage.
