Who Wants To Be Healthy? I Do!
If you read this blog you know I share stories of cheeseburgers, vertical lasagna and other dishes they may not be “calorie free” – but I also love to cook healthy as well and here’s proof!
As noted online:
Peas are a good source of vitamins C and E, zinc, and other antioxidants that strengthen your immune system. Other nutrients, such as vitamins A and B and coumestrol, help reduce inflammation and lower your risk of chronic conditions, including diabetes, heart disease, and arthritis.
With that in mind, my wife sent me this recipe for a healthy Fresh Pea Soup with Mint, so let’s make it!
One bag of fresh peas – or frozen if you only have that option
1 potato diced
1 onion diced
4 garlic cloves dices
4 cups chicken or vegetable stock
large bunch of mint
olive oil
salt and pepper to taste
sour cream
smoky paprika
Here is the video showing the entire process of making this quick, easy and delicious soup:
As the video showed, you just combine the potato, garlic and onion and sauté in olive oil for 10 minutes, then add the peas, salt pepper and stock and simmer for a half hour.
Blend it into a puree, drizzle with sour cream and toss in some whole cooked peas and more mint leaves, sprinkle with paprika and dig in!
My wife and I both really enjoyed this recipe – so easy to make and good for you!
I have said this before, but I love wet food, so soups are one of my favorite things to make – and since I love seafood of all kinds as well, I made this:
This Squid/Calamari Stew is also easy and delicious – see the recipe and step-by-step directions here:
If you want something just a bit more decadent, why not eat like Elizabeth Taylor?
The iconic Actress ate a the legendary Chasen’s restaurant in West Hollywood, and loved their chili – so I made it!
See the recipe here:
And if you love chili but want to watch the calories, I’ve got you covered as well:
This recipe is packed with flavor but not calories – see it here:

Very nice. I grew peas for the first time last year and they were mature while we were in Japan and Korea. Bad amateur gardener move. Great recipe.
HA! Well, being in Japan and Korea made the sacrifice OK to be sure! Thanks for the comment!
Peas and mint: very tasty combination. Thanks for sharing!
Our new favourite soup I have been testing pea and ? most combinations for my summer /spring cookbook…This looks and sounds delicious John 🙂
It really helps that the peas are fresh, Carol – I dont use them a lot but that is changing! Thanks for the comment!
Thanks for the tip John I am going to see if I can grow my own peas as I do prefer fresh peas although frozen ones if frozen when young and just picked can be just as good but some are like bullets-smile-what we get here anyway …
this does sound uber healthy and easy to make as well. I’ve never made this type of pea soup but I’m sure it’s delicious
It was my wife’s idea for a healthy soup and I loved it…I don’t cook with peas a lot but when they are fresh like this the flavor really does pop! Thanks for the comment!
So very different from split par soup. I’m sure it’s night and day
Split pea
I like Pea Soup, and Pea and Ham Soup too. But my wife can’t stand to even look at it. She says it is ‘too green’. 🙂
Best wishes, Pete.
I’m definitely going to make this recipe, John 👍🏻
