A Terrific Healthy Fresh Pea Soup Recipe!

Who Wants To Be Healthy? I Do!

If you read this blog you know I share stories of cheeseburgers, vertical lasagna and other dishes they may not be “calorie free” – but I also love to cook healthy as well and here’s proof!

As noted online:

Peas are a good source of vitamins C and E, zinc, and other antioxidants that strengthen your immune system. Other nutrients, such as vitamins A and B and coumestrol, help reduce inflammation and lower your risk of chronic conditions, including diabetes, heart disease, and arthritis.

With that in mind, my wife sent me this recipe for a healthy Fresh Pea Soup with Mint, so let’s make it!

One bag of fresh peas – or frozen if you only have that option

1 potato diced

1 onion diced

4 garlic cloves dices

4 cups chicken or vegetable stock

large bunch of mint

olive oil

salt and pepper to taste

sour cream

smoky paprika

Here is the video showing the entire process of making this quick, easy and delicious soup:

As the video showed, you just combine the potato, garlic and onion and sauté in olive oil for 10 minutes, then add the peas, salt pepper and stock and simmer for a half hour.

Blend it into a puree, drizzle with sour cream and toss in some whole cooked peas and more mint leaves, sprinkle with paprika and dig in!

My wife and I both really enjoyed this recipe – so easy to make and good for you!

  1. Very nice. I grew peas for the first time last year and they were mature while we were in Japan and Korea. Bad amateur gardener move. Great recipe.
