Want A Bowl Of Italian Penicillin? Here’s A “Creamy Pastina” Recipe For Good Health!

As always, what you are looking at is because my wife read about a soup called “Italian Penicillin” or “Sick Day” soup – delicious and incredibly healthy!

Here’s what the recipe said:

Creamy Pastina Soup✨ also called Italian Penicillin for good reason, it’s comforting, nourishing and perfect for when you’re feeling under the weather! Filled with vegetables, vitamins and hidden protein from bone broth. Incredibly easy to make with NO chopping needed!!!

Well then – a vegetable soup with no chopping, slicing or dicing? I’m in – let’s go!

Here’s what you need:

4 cups bone broth or chicken stock
2 cups water
1 large yellow onion, peeled and halved
3 carrots, peeled and halved
3 celery ribs, halved
6-8 garlic cloves
parmesan rind (optional)
1 tsp tumeric
1 tsp salt
1 tbsp butter
1 to 1 1/4 cups pastina, dry (depending on desired thickness)
3/4 cup freshly grated parmesan cheese
1/2 large lemon, juice

For garnish: grated parm, fresh black pepper, olive oil, parsley

Add the broth, water, parmesan rind, onion, carrots, celery and garlic to a large pot. Bring to a boil, cover partially, and lower the heat to a simmer for 30-45 minutes until vegetables are tender.

Here’s how easy it is to make!

Now the fun part: once you’ve removed the veggies and blended them, just pour the blended veg back into the broth, then add the butter, and stir to combine.

Pour in the pastina and simmer, uncovered, for 8-10 minutes until al dente. Stir about every minute to prevent sticking.

Once the pastina is al dente, turn off the heat and stir in the parmesan cheese and lemon juice.

Ladle into bowls and top with grated parmesan, fresh cracked pepper, olive oil and parsley.

Here’s how easy it is!

And there it is! Healthy, creamy because of the blended vegetables, and it has some very nice bulk to it due to the Pastina!

I’m so glad Alex found this recipe: the creaminess of the broth works great with the pastina pasta, and add the tartness of the lemon and some olive oil…delicious!

I also made a very healthy greek soup as well…remember how you add this very unique ingredient?

  1. Your darling wife does have some very good ideas, whatever name the dish espouses in the end. This has all the ‘good’ ingredients put together in a slightly different and interesting way . . .it even has my favourite turmeric in it 🙂 ! And I’m not telling a fib > am enjoying my afternoon cup of bone broth at the moment – bought, not made myself but ‘dependable’ !

  2. Now this looks delicious and healthy!
