Chef Mimi has shared a terrific looking recipe that celebrates tuna!
Mimi began her review by mentioning that she owns the cookbook “The Young Man and the Sea”, published in 2007. She had never heard of the author, David Pasternack, who is the Chef of the “seafood mecca” Esca in New York City, which he opened in 2000. Sadly it closed during the pandemic.
Here’s a great review of this cookbook from none other than Anthony Bourdain: “If I were strapped in the electric chair and facing a last meal of a sea creature, I would pray that Dave would be cooking it.”
Chef Mimi has made a great recipe from the cookbook and I am going to make it this week.

This was the most delicious halibut dish I’ve ever made – see the entire recipe here:
And while we are on a fish theme, how about this terrific Swordfish dish?
I made it with a homemade piperade sauce – here is the recipe with step by step directions!
Another great Provencal dish is “fish in crazy water!”
It’s light and refreshing – click on my story for the recipe and why they call it “crazy water!”
