
Who Wants A Taste Of Summer?
Well, I sure do, especially after my good friend and incredible winemaker Pam Starr gave me some of her summer harvest!
A wide variety of fresh Napa Valley tomatoes and yellow zucchini squash were handed to me by Pam, which meant I was going to make some summer recipes to share with you!

With the help of this fresh corn on the cob, I’m going to make a great tomato corn summer salad.

I bolstered Pam’s tomatoes with a few unique varietals I discovered at the Yountville Farmer’s Market!

These are really delicious! Here are the ingredients for the dish:
2 pounds fresh tomatoes
3 corn on the cob
2 cups diced English cucumber
½ cup diced red onion
¾ cup crumbled feta
½ cup fresh basil leaves thinly sliced, plus a few whole leaves for garnish
2 Tablespoons red wine vinegar
⅓ cup extra virgin olive oil
1 clove of garlic, grated – of course I used six!
1 teaspoon dried oregano
1 teaspoon kosher salt or to taste
Let’s start with the best part:

Shucking!
Yes, that’s me with one of the ears of corn I’ll be shucking….and since they were from the Farmers Market, I knew they were fresh!
This is my favorite part – when I get to strip them down – you can’t hurt them and it’s fun too:
I put them in boiling water for 5 minutes, then I let them cool and I cut off the kernels…then, it was time to dice some fresh tomatoes:
Next, add the kernels to a large bowl with the tomatoes, cucumber, onion, feta, and basil….here’s how easy it is:
In a small bowl or jar, whisk together the vinegar, olive oil, garlic, oregano, salt and pepper.
Pour the dressing over the corn then toss to combine. Taste and add more salt and pepper as needed, garnish with some additional basil le

It’s time to eat!
I want to point out one thing: the tomatoes are very fresh, so they bring liquid with them…by adding the dressing, it is a bit wet…I love it that way, but if you want to keep it a bit lighter, maybe don’t use the dressing at all!

This is a really fresh and fun salad to share on a special day – and it’s very colorful as well….and here is another way to celebrate tomato season – roll it!

Am smiling looking at your wonderful bounty! Love the look of your summer salad and have been watching Tucci’s latest on our late evening TV. Well, our spring vegetables arrive early > new season asparagus and artichokes will be ‘in’ in about 2-3 weeks 🙂 !
I’m sure you’ve heard about the horrible fresh produce parasite. We started here in Michigan, so I’m only buying from the local farmers to keep safe and enjoy the summers, bounty
