
Who’s Craving Pasta With Leeks? I Am!
I have vowed to cook more using Leeks, and the terrific blogger Chef Mimi gave me another reason to do so soon!
Chef Mimi loves to share great recipes like this one – a “pasta with leeks” dish, and here’s a great story she shared as well:
“When my mother was getting out and grocery shopping in her latter years, she often shopped at Dan’s in Park City, Utah, where she lived. The store gave out cards with printed recipes by chef Nick Stellino from his Cucina Amore cooking show on public television. I’d never heard of him, but he authored a cookbook of the same name as his show, published in 1995.”
I love that her Mom saved recipe cards from the grocery store!

Chef Mimi also shared the recipe card, and made the dish as well – now it’s on my list to make and when I do I will share my version – I already warned her there will be some sausage added to mine – and Chef OK’d that decision!

It’s all part of my new obsession with Leeks, which I love but never use enough when I cook!

I bought her cookbook and found a terrific “Salmon & Leek” recipe – se how it turned out here…hint: the Leeks were served vertically!
I also shared a healthy recipe to kick off 2025 and guess what? It had Leeks as well!

Love leeks! I use them as often as onions, which is a lot, and I can get them all winter at the farm stand. This pasta dish looks great!

I’ve never used them much in my cooking, but I do like them. this recipe sounds simple and fresh !
I have really gotten inspired to make more dishes using them…I love onions and shallots and they have that vibe…just trying to keep growing my palate! Thanks for the note, always great to hear from you!
I used to eat a lot of leeks at one time. But they are very fibrous, and as I (and my wife) have got older, we find them hard to digest and have stopped eating them.
