Vegetable Lentil Soup with Curry! I’ve Got FIVE Recipes For Good Health!

Want A Healthy Soup – That’s Also Delicious? How About FIVE?

I am always looking for healthy recipes for my wife and I, and I found this recipe online and since Alex loves Lentils, I decided to make it…add some Coconut Milk and Madras Curry Sauce to the mix and you have a rich, filling and healthy dish!

The dish is a nice mix of flavors, with lots of healthy ingredients! Let’s cook!

  • Olive Oil for sautéing vegetables
  • 2 Carrots, diced
  • Garlic, as many cloves as you live, diced – I used 6
  • Ginger Paste, a tablespoon
  • Potato, peeled and diced
  • Parsnip, peeled and diced
  • 1 can diced Green Tomatoes
  • 2 Tomatoes, diced
  • Kale, one head, chopped
  • Vegetable Stock, 4 cups
  • Coconut Milk, one can
  • Madras Curry Sauce, to taste but I used two heaping tablespoons
  • Salt & Pepper, to taste
  • Fresh Parsley, chopped

Here we go! I sautéed the veggies in olive oil, then added the vegetable stock and all the other ingredients and simmered for an hour.

Topped with fresh Parsley, the dish had a bit more color – but with a crusty slice of bread to dredge in the broth, it’s a winner!

I love wet soup, so a hearty soup is great for me…you can add other protein like chicken if you like and it works well…and speaking of delicious soups:
