Cookbook Confidential Has Traditional Jewish Cooking! Here’s A “Holiskes” – Stuffed Cabbage Leaves Recipe!

“Every cuisine tells a story. Jewish food tells the story of an uprooted, migrating people and their vanished worlds. It lives in people’s minds and has been kept alive because of what it evokes and represents.” Claudia Roden

With that quote, Bernadette kicks off the latest Cookbook Confidential series, with a number of people, including myself, cooking from “The Book Of Jewish Food” – the first recipe for review is this one:

These are Holishkes, or stuffed cabbage leaves. You can see the entire recipe and review at Bernadette’s website!

I enjoy taking part in this cookbook review: I learn unique cooking styles and a lot about the culture behind the cooking…my recipe is coming soon, but this series reminds me of one I undertook in 2022:

That was when I learned about a unique Norwegian fish dish thanks to the legendary Actor Vincent Price!

It was the first recipe of my yearlong “52 In 22” cooking challenge and you can see the recipe and why I got it from Vincent Price by clicking on my story here:

I cooked around the world that year, including this unique pancake recipe from Vietnam:

It was my first time cooking with Vietnamese flavors, click here for the recipe and to see how I did:

And I also cooked some traditional food from the US as well – I loved loved loved this dish:

This pulled pork pasta with almond cream sauce was delicious…see the recipe here:

This recipe came from a TV show I produced. Michael Ruhlman was one of my terrific Judges on “Cooking Under Fire”, and I’ve already cooked from one of his terrific books:

Ruhlman’s “Egg” cookbook is incredible, but I almost butchered his “Crispy Mollet Egg With Asparagus” recipe – click here to see how I salvaged it:

  1. I love her intro! I have a couple of Claudia Roden’s books and her recipes and cultural information is always interesting. The cabbage rolls look amazing!

  2. Stuffed cabbage leaves are a staple food in so many countries and cultures. I had some tasty ones when I visited the former Soviet Union.
    Best ishes, Pete.
