A Recipe For Comforting Bacon Corn Chowder! My Favorite “Wet” Food!

Who Loves Chowder? I Do!

We are in the depths of winter here in the US, with sub-zero temperatures and it mean I need warm comforting food!

I love wet food: so soups, stews and chowders are favorites of mine…and here is one of my favorites because it is delicious and fast and easy to make!

Bacon Corn Chowder!

First, here are the ingredients:

8 oz bacon , chopped

2 tbsp butter (use 3 tbsp if bacon is lean)

As many garlic cloves as you like , minced

1 small onion , diced

5 tbsp flour

2 cups chicken broth 

3 cups milk 

2 potatoes , cut into cubes

2 sprigs of thyme OR 1 tsp dried thyme

3/4 cup cream – optional

3/4 cup shallots / scallions , green part finely sliced

Salt and pepper to taste

  • Place 1 tsp butter in a large pot over medium high heat. Add bacon and cook until golden, then add garlic and onion. Cook for 2 – 3 minutes until onion is translucent.
  • Add fresh, canned or frozen corn and mix it in. Cook, stirring, for 1 minute – then add the flour and mix as well.
  • Add everything else but the cream: stir in the broth, milk, potatoes, thyme, salt and pepper and then put the lid on and simmer for 25 minutes

That’s it! After it is done simmering, you can add the cream if you like, which will give the final dish a creamy flavor that is terrific:

This is so fast and easy to make, and I love the flavor…and it presents well too! Serve it with some crusty bread and a salad and you have a great meal!

  4. As a New Englander, I love just about any chowdah, but corn is one of my all-time favorites. My mom always put bacon in hers as well.
