Have You Made A “Half ‘n’ Half” Frittata?
Well, before you answer, let me explain: my wife Alex found the recipe for a very healthy frittata that uses mashed sweet potato as a bottom crust!
I was eager to make it for her, but I wanted a bit more “oomph” in it for me – so I made one Frittata two different ways in the same pan – here’s how it went:

Here are your ingredients – with two really important health tips to share!
It begins with my favorite ingredient of them all – which is SO healthy for you!

Garlic – for the hamburger side of the frittata – as much as you love! But chop it at least 15 minutes before using because that breaks open its plant cells and triggers a chemical reaction that creates a powerful new nutrient called allicin!
More reason to love lots of garlic!
Next up, another great health hack:

2 cups chopped Broccoli – When you chop the broccoli, you break open the cell walls. This brings glucoraphanin and myrosinase into direct contact with each other. The myrosinase enzyme quickly converts glucoraphanin into sulforaphane, an antioxidant known for anti-inflammatory and cancer-protective properties – boom!
Now, the rest of the ingredients:
1 cup Fresh Peas
1/2 Red Onion, sliced into ribbons
4 Eggs
Mozzarella Cheese – as much as you want
Salt and Pepper to taste
And now, the “half ‘n’ half” option:

I wanted a bit of meat in my Frittata, so I decided to go “half ‘n’ half” on this recipe, using hamburger!
This is something you can make any day, put in the refrigerator, and have it ready to add to any dish – like this one:
Season the hamburger however you like it best, then pan fry it with as much diced garlic as you can handle and cook until done, then set aside…now, onto the sweet potatoes:

These sweet potatoes will form the “curst” on the bottom of the frittata…just peel, dice, boil, drain…so easy:
Now, the fun part….spray your baking dish with olive oil and mash the sweet potatoes right in the dish…then add the broccoli, peas, red onion and the eggs…then top with mozzarella cheese and bake at 375 degrees for 20-25 minutes…here is the process:
Here it is, ready to go into the oven:

And here it is coming out:

One half has the hamburger, while the other half is pure vegetarian – both are delicious so let’s cut ourselves a slice:

As you can see, the sweet potato has a nice bottom to the dish, with layers of broccoli, peas and cheese…the red onion adds a nice bit of “pop” to the dish as well…

Alex loved her side of the dish: the creaminess of the sweet potato with the pop of fresh red onion – with the broccoli and peas giving it an umami vibe as well…and of course, how doesn’t love melted mozzarella cheese?
This was a great dish for breakfast or brunch…speaking of that, here’s another one I love to make Alex:

How about some baked eggs with a chocolate strawberry taco?
I made it and you can too – see the recipe here:
And I’ve made Frittatas using leftovers…two different ways!
See them both here:
And speaking of egg dishes, I also posted a “dinner and a movie” that included the “Moonstruck” eggs made famous by Cher!

Yes, some call this a “toad in a hole” but whatever you call it, Cher loved it and you can see the recipe here:
