Ever Had A “Confetti Salad?” Here’s A Healthy Recipe For A “Fresh Green Confetti” Dish!

Have You Eaten A “Confetti Salad?”

Well, I never heard of it, but thanks to my wife Alex, now I am hooked!

A Confetti Salad is a colorful, crisp, and refreshing dish loaded with a bright mix of vegetables that look like confetti. It is a popular side dish for potlucks, BBQs, and picnics.

I found this picture online – showing a multi-colored effort..and I love the idea here: dice up zucchini, bell peppers, red onion, celery and more, then mix it all together….when Alex sent me a recipe, it was a “confetti green” version, so let’s see what I used and how it turned out!

Fresh Green “Confetti Salad!”

Here’s how green I got:

I cup fresh cooked peas

2 diced baby cucumbers

1 cup sliced green olives

2 cups arugula

2 cups chopped kale

1/2 cup fresh dill

1/2 cup fresh parsley

2 avocados – dice ’em up!

1 cup crumbled feta cheese

As you can see, a very easy recipe to put together…and while it was a “green confetti” salad, I did add some crumbled feta at the end as you will see…here’s how it all came together:

That last part was fresh squeezed lemon and olive oil mixed in…light, refreshing, and it let’s the vegetables and herbs have a strong voice in the dish!

A Fresh “Green Confetti” Salad!

Fast, easy and really delicious – this is a healthy Sid edish or a main course – you can always change up the colors and add beans, green peans, red onion and more!

For me, the best pop of flavor comes from the green olives! I love them and love to cook with them – like I did with this:

This spicy salmon and green olive stew is incredible – see the recipe here!

I also cooked a paella dish that had a healthy amount of green olives as part of the recipe:
