Take A Look At My New Favorite Recipe!

One of the great things about social media is I’ve met so many people through their blogs, like Robin, who runs the Robin & Willow blog…she has great recipes along with lots of other terrific content…and here’s proof!

Here’s the setup for a dish she shared called “cheesy corned beef hash with eggs!” Every single word in that title speaks to me! Here is Robin, who has shared a number of terrific recipes I’ve passed along like this one:

“Growing up, my mom made hash with fresh beef from the local butcher – never canned – and I’ve taken her crispy method, added my own cheesy spin, and borrowed a tip from Snoop’s Goon with the Spoon. He bakes eggs in wells, shakshuka-style, but I’m all about that sunny-side-up finish. It’s farmhouse roots with a modern twist, and trust me, it’s a game-changer.”

Yes Robin, it is indeed!

The dish combines two of my favorite things: eggs and potatoes…I’m not as familiar with cooking corned beef hash, but no canned product for me, so I’m going to try to make it from scratch!

  3. I am still a fan of corned beef, so would definitely eat this. At one time corned beef was a staple in the UK, but it seems to have fallen out of favour. I usually buy some a couple of times a month, to eat in sandwiches. My mum used to make corned beef fritters for a midweek dinner in the early 1960s.

    • Interesting Pete, thanks fr sharing…similar here…leaner proteins are more popular now like chicken and turkey, but to make those into sandwich meat involves lots of processing and ultra-processed foods are the worst thing for you!
