
Eggs. Eggs. $$$$$$$ EGGS!
The price of eggs has been on America’s mind for almost a year…what had been slowly creeping higher cost suddenly exploded in the fall when bird flu caused a massive disruption to farmers and factories across the country…

This is not a political story AT ALL – regardless of promises made about food prices, this is a story of how a virus decimated and disrupted our egg supply, leading to many stores rationing eggs…some have cut back, while others sucked it up and had a bit of fun with the high prices:

Well done to the person behind this meme…because while eggs are in general a very inexpensive food item, they become much less so when a $3 dozen suddenly sells for triple that…so let’s talk a recipe that is delicious, filling – and still inexpensive!

It all begins with the egg: you can buy organic, free-range or a basic dozen in a rectangular box. Be aware that “free range” just means they have ACCESS to an outdoor space, but there are no regulations regarding how big that space is or any requirement for the chickens to actually ever go out there!
With that said, let’s make breakfast!

This is a simple dish: you just need these ingredients:
2 Eggs per person
Fresh Spinach – a half package or half head of spinach per person
Garlic – as much as you want but at least two sliced per person
Parmesan Cheese – use a whole piece to shave yourself
Olive Oil – it’s the best thing to cook in!
Salt and Pepper to taste
2 slices of bread for each person
First, slice the garlic and sauté in the oil…add your salt and pepper as well…

This usually take 5-6 minutes on a low temperature…because the garlic will caramelize later in preparation so low heat is best right now…here’s how it looks in the pan:
Once cooked, fill the pan with your fresh spinach…

You do NOT need to cook the spinach yet – that is up next! After putting the spinach in the pan, you add the eggs like this:

I plan for two eggs per person and since we had my son with us, I made a six pack of them!
Next up, time to grab your block of parmesan cheese:

I love to grate fresh parmesan over everything, so I did!
Here’s how easy it is!
Cover and poach the eggs over medium heat for about ten minutes!
Then, time to take them off the stove and put two eggs, which are nicely poached on top of the wilted spinach and caramelized garlic, on a plate and serve with crusty bread!

I served my son three eggs and they were just soft-poached enough to give a tasty, creamy yolk for the toast:

I love this dish, and here’s a rough estimate of what it cost per person:
$5.00 – Half Dozen Eggs
$4.00 – bag of Spinach
$1.00 – garlic bulbs
$1.00 – Parmesan cheese – you don’t use the much as it is shredded
$0.50 – two slices of toast
Total? This dish will set you back less than $12 for three people, probably less! And it’s healthy, so that’s a bonus!

I didn’t mention it in the story but they were given to us by a Producer who raises chickens! Those usually are smaller!

Pete, people are getting pretty worked up about the issue, which was caused by a virus killing chickens here as you know…which is why dismantling many of our government departments who work to solve issues like this is so dangerous for us
We also have Avian flu in parts of England and many birds have been destroyed as a result. But the egg prices have increased very little.
Well, that makes sense as the US is upside down and can’t handle anything…
