Have You Eaten A “Coccoi?”

Well I never have and until recently, neither has Chef Mimi – but how she came across them is a great story in itself!

First, a definition: Coccoi is a grated vegetable flatbread from Sardinia, baked in the oven till it’s crispy.

Those look delicious, and Mimi shared the process of making them – after she shares the funny way she discovered them!

Chef Mimi used a recipe she found from a site called “Pasta Grammar” – and she links to them as well.
