
Need A Great Recipe For Leftover Turkey?
With Thanksgiving just behind us, many people have a lot of leftover Turkey, and instead of sandwiches or “Tettrazzini”, what about this terrific soup that uses ground Turkey, so you could use leftover Turkey instead!

A “Tuscan White Bean Kale and Turkey Soup!”
Winter is here, so a hearty, warm and filling soup is what my wife Alex wanted, and here’s what I made!
I used this recipe from The Kitchn, a great site for foodies like me! I will note my tweaks to it.

Here are the ingredients:
- 2 (about 15-ounce) cans white beans, such as cannellini or great northern
- 2 tablespoons olive oil
- 1 lb. ground Turkey – or use your leftover Turkey chopped up!
- 1 medium yellow onion, diced (about 1 1/2 cups)
- 2 medium carrots, peeled and cut crosswise into 1/4-inch-thick rounds (about 1 cup)
- 1 medium celery stalk, diced (about 1/3 cup)
- 2 sprigs fresh rosemary
- 3 cloves garlic, minced – of course, I used 15!
- 1 1/2 teaspoons kosher salt, plus more as needed
- 1 (32-ounce) carton low-sodium vegetable or chicken broth (4 cups) – I used Turkey broth!
- 1 small bunch flat-leaf kale (about 8 ounces), center ribs removed and leaves coarsely chopped (about 5 cups)
- 3 tablespoons freshly squeezed lemon juice (1 medium lemon)
- parmesan cheese
Let’s get oooking!

You begin by sautéing the onion, carrot, celery, garlic, and fresh rosemary in with your ground turkey – it makes for an incredibly flavorful soup base.
Here’s how easy it is:
Next up, you mash one can of the white beans and add them in to your base – just a potato masher to get a rough mash and put them into the pot – they will make your stock creamier!
After you stir in the smashed beans you add the broth, simmer to allow the flavors to come together – the mashed beans make the base creamier, and the smell in your kitchen is intoxicating too!

Finally, stir in the other can of whole beans and add the chopped kale and cook until tender and bright green. Here’s a look:

Finally, your last two ingredients bring it all together in the most delicious way!

Shave the Parmigiana and a healthy squeeze of lemon does the trick!
To ensure the lemon flavor really comes through, wait to add it to the pot until the very end of cooking.

I think this would be a great way to use leftover Turkey instead of ground as well…and it’s healthy!

oh, I love this and will try it !
Well, leftover turkey would be a rarity Down Under but your appetizing soup methinks will accept another ‘protein’ quite happily 🙂 ! Besides your green and healthy looking offerings I have another reason to like your posts – love your mise en plas ingredient photos – what you buy locally, with the product names and looks . . . as if I was at an American supermarket 🙂
We sometimes have the traditional Tuscan 3-bean soup, but adding turkey seems like a good idea to me.

Alex loves the soup, and Turkey or Chicken are healthier proteins to add, but we also make it with just the beans and kale and it is delicious that way too!
