Here’s A Healthy & Delicious Carrot-Ginger Soup! Plus 3 More Healthy Soup Recipes!

Time For Healthy Eating…

Sure, I share lots of pictures of burgers….but that’s for fun, it’s not my main diet.

I try to eat healthy – yes, even when I share video like this:

For every Portugese “Franceshina” sandwich – delicious but decadent, there is this recipe for a delicious carrot ginger soup…let’s make some!

Here are the ingredients:

1/2 stick of butter

1 tablespoon extra-virgin olive oil

½ medium yellow onion, chopped

1 shallot – gives a nice bit of sweetness

½ teaspoon sea salt

3 garlic cloves, smashed – of course I used ten!

1 pound carrots, roughly chopped

Here’s the process so far. Heat the oil in a large pot over medium heat. Add the onions, garlic, shallots, salt and pepper and cook until soft, then add the carrots…here’s what’s next:

I then grated 1 teaspoon fresh ginger – well, that’s the minimum but I doubled it if you watched the video.

Then the rest is easy….add the chicken broth, black pepper and salt and bring it to a boil then let it simmer:

I stared it every few minutes to keep it moving…about a half hour is all it takes…then add the orange juice and some fresh mint.

Next up, time to blend it – you might want to let it cool for a minute, or be careful not to splash…

Add a half cup of fresh orange juice and a few of the mint leaves and blend, then pour it into a bowl and top with fresh mint leaves – and it’s ready to serve!

From this point forward, you can add more chicken stock or orange juice if you want your soup not as thick, but this blend worked for me!

  3. Am smiling! There is nought wrong with the occasional burger – make it yourself from fresh ingredients and don’t eat both sides of the bun 🙂 ! But I DO love all your soups – shall ‘investigate’ the vegetable lentil first of all but your carrot one is also ringing bells! Thank you!

  6. We are big fans of soup, though we only tend to have it in the winter. Julie makes a great soup from leftover turkey after Christmas, and we freeze some of it for later.
