I Made Homemade Smash Burgers! Here Is The Recipe – And The “Oklahoma Style” Smashburger Too!

Behold A Smashburger…

It is perhaps the hottest new burger in America right now – the smahsburger!

Look up an image online and this is what you will find: smashed hamburger patties topped with melted yellow cheese, with pickles and an orange-ish sauce…while there are variations, this is the foundation for what is called “the smashburger”:

a type of hamburger where loosely packed balls of ground beef are pressed or “smashed” onto a very hot griddle or pan to create a thin patty. This high-heat, high-pressure cooking technique creates a deeply caramelized, crispy, and flavorful crust on the burger, resulting in a texture that is both crunchy at the edges and tender inside

They are easy and fun to make, with very few ingredients so let’s go!

  • Ground Beef.You can use 80/20 meat to fat ratio, but I used 90/10 to be leaner. You should get 4 patties from a pound but you can make then smaller as well. Do NOT make them too meaty as it defeats the point of the smash!

Here’s the biggest variable: making this smashburger “Oklahoma style”:

Oklahoma Fried Onion Burger, is a type of smash burger where a generous amount of thinly sliced onions are smashed directly into the beef patty on a hot griddle. This creates a crispy, caramelized crust on both the beef and onions, resulting in a unique flavor and texture. 

  • YES! DO IT! The Onions should be sliced thin. As many as you can handle! You can make a smashburger without them but we love what they add to it!
  • Salt and pepper to taste
  • Hamburger Buns
  • Pickles. You can use sweet or dill, or a combo. There is no right or wrong.

Time to smash!

These are about a quarter pound each…formed into a ball and salt and peppered. I used a special griddle plate on my grill…I got it nice and hot and then added the meat…here’s how easy it was:

As you see, it’s so easy: smash the burger and cover with sliced onion then put weight back on…after a few minutes, take the weight off and time to flip and add the cheese!

Here we go:

Smashburgers use a special sauce that is very much in the “thousand island dressing” family…this photo I found online from “simple and fraiche”…most use these ingredients, and I say add a bit of each and then tweak until you like the result!

  • Mayonnaise
  • Pickle Relish
  • Ketchup
  • Mustard
  • Garlic Powder
  • White Vinegar
  • Sugar

As you can see, they are really easy and I love them! The crispiness of the outside burger and the onions are balanced by the crisp pickles, melty cheese and delicious sauce – yes, I use a lot!

If anything, I would have smashed my burgers even more, like thin pancakes! You really don’t want much meat inside, so the crispiness really shines!

I made four of them: cooking two at a time…they were delicious, and our friends loved them too! For his birthday, we surprised Kevin the next day with his own griddle and a “smashburger” kit and he made his own the next day!

I will use even more onion the next time….and I do have a ways to go before I get close to the gorgeous smashburger from Hamburger America:
