Carol Cooks Malawi Cuisine!

The terrific Food Blogger and Cookbook Author Carol has a great series called “A – Z World Cusines” and for the letter “M” she chose the African country of Malawi….as she writes:

“A traditional Malawian chicken stew (often called chicken curry) is a hearty, flavourful dish with a rich tomato base, usually seasoned with curry powder and served over nsima (thick cornmeal porridge) or rice.” 

Carol goes on to add:

“The recipe generally includes chicken, oil, onions, celery, garlic, carrots, tomato paste, whole peeled tomatoes, white distilled vinegar, and yellow curry powder…”

I will be cooking from Carol’s holiday cookbook this week and will share that story – and a link to her book – then…what I loved about Malawi is that my wife and I went on our first safari this summer and loved learning about the culture and food of Southern Africa:

  1. Gosh, I’ve been to Madagascar and Mozambique, but had to look up Malawi! The singing and dancing was very similar. Don’t you love Sundowners?!!

I love researching and trying the eastern and southern cooking of South African countries as their interpretations of the so-called ‘curry’ dishes of the southern Asian lands like India, Pakistan, Sri Lanka and occasionally Bangladesh et al can vary quite considerably from that of Australia, also a hugely ‘curries’-loving country. I notice they quite correctly call it ‘chicken stew’ – the word ‘curry’ stems from the British East India Company days and now encompasses main dishes in 23 countries in the world, all different – hence, to me, it has little meaning !
