
Bite Down On A Bit Of Paradise!
This is Kiribati – a tropical paradise to be sure…and thanks to my friend Carol, I now know that it’s home to some wonderful food as well!

This map shows you how sprawling the South Pacific is…Kiribati was a British colony that gained independence in 1979…Kiribati is pronounced “Kiri-bas” and is made up of 33 atolls in the equatorial Pacific. The islands are low-lying and at risk from rising sea levels due to climate change.
This inspired Carol to do one of her “A -Z Of World Cuisine” posts to showcase the culture and flavors!

Here’s what Carol shared:
“Kiribati cuisine is based on seafood, breadfruit and rice… The national dish is often described as palusami, which is taro leaves baked with coconut cream. It is not a country I was even aware of but one I would love to visit and taste the cuisine but for now, a visit is just a virtual one I hope you enjoy!”

I wa slucky enough to spend two days in Budapest, and got to try a classic local dish:

This Wiener Schnitzel with Spaetzle was incredible – and I ate it at Budapest’s famous Market Hall!
